[VOIPSEC] Cisco Handset Emulator?

Does anyone know of any software tools to emulate various Cisco handsets, including the 7960, 7961?
I would like to create a Linux or MS-Windows device that can completely emulate the handsets, including CDP.
We intend to use this as part of our in-house security testing team toolbox.
Ideally this would include the capability to set the MAC address to the address of your choice.   It would also include the capability to anticipated and unanticipated traffic with the Call Manager and other VoIP devices to test the immunity and resiliency of these components, as deployed in our environment.

Alternatively, does anyone know of open-source softphones that completely emulate the Cisco IP Communicator Softphone, that could be re-used to achieve this.
