[VOIPSEC] Is there a live Linux distribution with a collection of VoIP sniffing and attacking tools for doing some assessment?

That is correct but they will be in the new BackTrack3 which will be
released soon.

Nessus is not included in BackTrack, Cain&Abel is windows software (never
tried to get it to run in wine). Wireshark is included.
